Short Ribs with Sapporo

short-ribs

ingredients

3 pounds beef short ribs
2 cups salt
1 carrot, roughly chopped
1 onion, finely chopped
2 stalks celery, finely chopped
1 quart veal, beef or chicken stock
1 pint Sapporo beer
2 sprigs thyme
1 sprig rosemary
5 pieces sun-dried tomatoes, chopped
4 ounces foie gras scraps (optional)
1/4 pound Italian flat leaf parsley, picked and chopped

directions

Day 1: Cure the meat overnight by covering the ribs with a cup of salt. Cover and refrigerate.

Day 2: Remove ribs from salt pack and rinse. Coat a large oven-proof pot with olive oil and lightly sear the ribs over medium heat. Add the chopped vegetables and cook until caramelized. Add stock, beer, thyme and rosemary. The ribs should be covered in liquid; if needed, add water. Cover the pot and bake in the oven at 325 degrees F for about 4 to 6 hours, checking periodically.

When ready, the meat should fall off the bones. Remove and let cool in the liquid. When cool enough to touch, remove the bones, carrot pieces, and thyme sprigs; reserve thyme.

Pick through meat – remove any excess fat or sinew. Strain out the liquid and add to saute pan over medium heat until it reduces to a thick sauce.

Mix the meat with sun-dried tomatoes, foie gras, parsley and sauce; press into a hotel pan and refrigerate overnight.

Day 3: Cut the short ribs into cubes and season with salt and pepper. Sear in olive oil to brown and crisp the edges. Serve.

About Sapporo

Founded in Sapporo, Japan in 1876, a German-trained brewer named Seibei Nakagawa combined his advanced brewing knowledge with his passion for Japanese craftsmanship and created a one-of-a-kind beer. From the beginning, Sapporo was a favorite among beer lovers – a crisp, clean taste they appreciated and an advanced brewing process they respected. Today, Sapporo is the oldest beer brand in Japan.

Sapporo lagers, with their famously crisp and refreshing taste, have been enjoyed by stylish and contemporary, yet selective beer-loving consumers for almost half a century in the U.S. Sapporo Premium was first brought to America in 1964. In 1984, SAPPORO U.S.A., INC. was founded to maintain the high quality and distribution of the brand throughout the country. Soon thereafter, Sapporo established its status as the #1 Asian beer brand sold in the United States. Today, three varieties of the brand (Sapporo Premium, Sapporo Reserve, and Sapporo Premium Light) are enjoyed by beer connoisseurs across the country.

Sapporo beers are made from only the finest natural ingredients and epitomized by a luxurious use of aroma hops & fine aroma hops. The combination of select barley and hops with an extreme attention to quality give Sapporo beers their crisp taste, refreshing flavor, and mild, refined bitterness. Their uniquely shaped silver can represents the distinctive style and flavor one can enjoy from Sapporo beer. Before reaching consumers, Sapporo goes through multiple processes to ensure the quality is at its best. Sapporo scientifically tests gas volume and oxygen levels, and perform a thorough “five senses” test, including smell, taste, color, foaming, and brightness. From quality ingredients to their unique packaging to thorough testing, Sapporo knows how premium beer is made. All Sapporo products sold in the United States are brewed in the La Crosse, Wisconsin and Guelph, Canada.

Brother Jimmy’s BBQ

BJ's Sign

Brother Jimmy’s has celebrated over 25 years of legendary North Carolina, slow-smokin’ barbeque. As suggested by the restaurant’s slogan – “Put Some South in Yo’ Mouth” – Brother Jimmy’s mission was, and still is, to bring “down-home” cooking, hospitality and merriment to the heart of the Northeast.

Over the years, Brother Jimmy’s established itself as the home away from home for A.C.C. Alumni. Homesick alums from Duke, UNC, N.C. State, Georgia Tech, U.V.A., Clemson, Maryland, and Wake Forest began to flock to Brother Jimmy’s to catch the big Duke/UNC game, or to watch the Demon Deacons take on the Terps. By opening in Manhattan’s most popular neighborhoods, Brother Jimmy’s found a home in the hearts of New Yorkers. It has become the restaurant in NYC that reminded Southerners what good ‘ol Southern hospitality was all about and showed Northerners just what they’d been missing all these years.

Since 1989, Brother Jimmy’s business has grown from a simple BBQ hangout into a refined brand that embodies consistent, quality Southern specialties for brunch, lunch and dinner. It has also become a staple nightlife venue consistently rated at the top of multiple categories in the Zagat Nightlife Survey, and serves as a local haunt for everyone from sports fans to celebrities.

Grab the Bubbly. . .Enjoy it New Year’s Eve or the Entire Week

The new year is full of sparkle and it’s a great time to crack open that bottle of bubbly.  Champagne is a great accompaniment to cocktails, adding just a touch of refreshment.  Plus, mimosas are a great way to toast the weekend on the beach, at the lake or on vacation.

The problem is, once you open a bottle of Champagne or sparkling wine, you usually have to drink it right away.  And, while this might not seem like an issue with the first bottle, the second bottle is usually in danger of spoiling.  Keeping those bubbles popping can be tough.

Until now. . . .this great bubble-lasting, champagne popping and sparkling wine must-have is created by two wine veterans.

The Museum of the City of New York held its annual Children’s Holiday Party on Tuesday, December 10th in the Museum at 1220 Fifth Avenue. Children and their parents took over the Museum’s first floor for games, crafts, and a chance to give Santa their wish list.  Eleven-year old DJ Kai Song revved up the crowd with his mix of contemporary music and holiday up-tempo classics.  Eleni’s cookie elves helped the children decorate tree cookies while face painters transformed the little ones into all sorts of creatures.  Wendy, the Pipe Cleaner Lady, made crowns, flower and rings for the children and showed them how to make their own.  Sammie and Tudie entertained with their wacky antics, Magic Al dazzled the guests with his tricks while storyteller Barbara Aliprantis wove tales and Mike the Ballooniac created animals, hats and soft sabers. Santa sat among beautifully decorated trees, presents and an elf-size gingerbread house to welcome the children to tell him what they wished for and to have their picture taken with him.  Guests were given red Museum PNW waterproof backpack units to carry their hand-made crafts and reindeer antlers to turn them all into Santa’s helpers.

Museum Trustee Stephanie Hessler served as Chairman for the party with Celina Apóstolo Merrill, Laurie Beard, Pamela Henes, and Carola Jain supporting her as Co-Chairs. Hélène Comfort and Emily Garbaccio served as Vice-Chairman and Patrons included Lisa Abel, Michael Borrico,Teri Friedman, Kathy Prounis and Margot Takian.
