Nero Ossidiana

Lipari (Aeolian Islands – Sicily), February 27th, 2024

An ancient native variety, a clear intent to perpetuate the millenary winemaking tradition of Lipari, and the vision of creating the first true “classic red of the Aeolian Islands”: this is how Nero Ossidiana was born, one of the signature wines of Tenuta di Castellaro, named after obsidian, the intensely black volcanic rock that characterizes the Aeolian landscape.

Sun, stone, wind, earth, and sea: these elements and more are encapsulated in the organic wines of Castellaro. Born from the volcanic and Mediterranean terroir of Lipari and from the indigenous grape varieties of the Aeolian Islands, these wines express the essence of their origin.

Corinto Nero is an ancient variety thought to have been introduced to Sicily by the Greeks. Over centuries, it adapted to the climate and soil of the Sicilian islands, thriving in the ideal conditions provided by the proximity to the sea and the mineral-rich volcanic soils.

With the consultants from the French nursery Pépinières Guillaume,” says Massimo Lentsch, who founded the winery on the island of Lipari in 2005, “we conducted a mass selection of this indigenous variety, Corinto Nero, along with Malvasia delle Lipari, in vineyards across the Aeolian Islands.

The vines were propagated from scions (vine cuttings) chosen from a vineyard with diverse DNA to maintain the greatest genetic variability within the same grape variety, resulting in plants with differing physiological and productive characteristics. Thanks to this recovery effort, Tenuta di Castellaro holds the national primacy in cultivating Corinto Nero, a low-yield variety that is particularly challenging to manage agronomically.

Present since the winery’s first harvest in 2008, Nero Ossidiana – a blend of Corinto Nero with 10% Nero d’Avola – boasts a deep ruby red color. “It is a complex, structured wine,” explains Emiliano Falsini, Tenuta di Castellaro’s winemaker. “It stands out for its saline notes and spicy tones, as well as its strong and decisive character. The wine balances the acidity and elegance of Corinto Nero with the soft warmth of Nero d’Avola, fully expressing the unique typicity of a land that is both volcanic and maritime. It enologically represents the union of the island and the sea.

Tenuta di Castellaro: Where the sun sets over the sea and the millenary tradition of bush-trained vines endures, Tenuta di Castellaro rises on volcanic soil as a monument to nature, culture, and architecture. This winemaking project, deeply tied to the historical and landscape heritage of the region, tells the story of Lipari, the largest of the Aeolian Islands.With 24 hectares of vineyards producing about 70,000 bottles annually, a cutting-edge modern winery, a wine resort, and the geo-mineral park of the Kaolin Quarries (restored and made accessible to the community), Tenuta di Castellaro is a unique and multifaceted reality. Its approach to viticulture has always been natural, adhering to organic and vegan protocols. The wild allure of this untouched, remote, and magnetic corner of the world captivated the Lentsch family from Bergamo, who in 2005 embarked on an ambitious winemaking and landscape project.

Their goal: to preserve, enhance, and share the beauty of this place, safeguarding its traditions and peculiarities. With wines crafted from native island grapes—such as Malvasia delle Lipari and Corinto Nero—they create a pure expression of the territory.

St. Patrick’s Colcannon & Corned Beef

Colcannon potatoes ingredients:
2½ lbs. potatoes (floury variety)
4 Tbsp. (¼ cup) milk
7 oz. curly kale (hard stalks removed)
8 spring onions (finely chopped)
1½ tsp. sea salt
¼ tsp. black pepper
4 oz. (1/2 cup) unsalted Irish butter
4 fl. oz. (½ cup) heavy whipping cream
4 fl. oz. (¼ cup) reserved cooking liquid from kale

Corned beef ingredients:
1½ lb. flat-cut brined corned beef
a little olive oil

Parsley cheese sauce ingredients:
2 oz. butter
2 oz. flour
½ pint (1 cup) whole milk
¼ pint (½ cup) chicken stock
1 oz.  (1/4 cup) Dubliner Irish cheese (grated)
1 tsp. Dijon mustard
handful of curly parsley (leafy part only and finely chopped)
curly parsley sprigs (for garnish)

Directions

1. To cook the brisket, it can be slowly boiled or baked in the oven. Low and slow is the key.  For the oven method, preheat the oven to 300°, then wrap up the brisket like a parcel inside a sheet of foil, fat side up.
2. Drizzle a little olive oil over and roast for 1 hour per pound, leaving 15 minutes for the meat to rest before carving.
3. To make the Colcannon, place the potatoes in a large pan of cold, salted water with milk, adding just enough water to cover the potatoes.
4. Bring to a boil and then reduce the heat and simmer for about 20 minutes until the potatoes are soft when pierced with a fork.
5. Drain the potatoes with a metal strainer then set the potatoes back on the warm stovetop to allow them to dry out a little.
6. In a large saucepan, bring some water to a roaring boil and blanch the kale for 1 minute.
7. Saving some of the cooking water, drain the kale, roughly chop, and place the kale in a blender, pulsing for a few seconds.
8. Melt the butter with the cream and ¼ cup of the retained cooking liquid from the kale. Infuse the spring onions, cooking for 30 seconds to soften.
9. Mash potatoes and slowly add the resulting liquid. Fold in the kale, salt, and pepper.
10. Prepare the parsley sauce by melting the butter in a small saucepan. Add the flour and allow to cook gently for 1 minute, stirring constantly. Whisk in the milk and chicken stock and bring the sauce to a simmer and cook for 3–4 minutes. Stir in the cheese and mustard and cook for 1 more minute. Season with salt and pepper and stir in chopped parsley.
11. To serve, spoon the potatoes onto a warm plate. Place slices of corned beef on top. Drizzle meat and dish with about 2 tbsp. of parsley sauce.
12. Garnish with a small sprig of curly parsley and serve immediately.
